We here at Mabel and Joy love granola. We always have. We love it on our yoghurts. We love it on our cereals. We love it with milk. In all honesty, what is there not to love about granola?
With the cooler weather it was decided that a batch of chocolatey granola was on the menu. The house smelled amazing and I have to admit, quite a bit of the just-out-of-the-oven warm granola was eaten. What was left behind has been placed in a air tight glass jar and is ready to add to breakfast each morning. There's no fuss, just pure enjoyment.
Our recipe for chocolatey granola can be modified with extra sweetness added if you prefer. We went for a less sweater option. We're big fans of the 'less is more' way of thinking. Less cost, less fuss, less cleanup. Win, win and win!
3 cups of raw rolled oats
1 cup of roughly chopped raw nuts (almonds, pecans, walnuts are the best)
¼ cup of desiccated coconut
3 - 4 Tbsp Mabel & Joy Balance Superfood Booster blend
1 tsp sea salt
1 Tbsp coconut sugar (or organic raw cane sugar)
¼ cup of coconut oil
¼ to ½ cup of maple syrup (we used ¼ of a cup)
- Preheat the oven at 180°C
- Combine all ingredients in a bowl and mix until the wet ingredients is evenly distributed throughout the mix. You may prefer to heat the coconut oil and maple syrup together prior to pouring in. We mixed all of the ingredients with our hands (in gloves) and found that the heat from our hands was enough to melt the coconut oil.
- Line an oven tray with baking paper and spread mixture evenly.
- Bake for 20 mins and stir (check at the 15 minute mark - if starting to brown then stir), to mix the ingredients. You are looking for the mix to go golden to dark brown. Stir and bake for another 10 minutes if the mix hasn't coloured as yet. Depending on how dark you like your granola you can bake for another 10 minutes, but be careful this is where the granola can burn so you'll need to check on the mix at shorter intervals.
Granola is so versatile and that's why it is a breakfast favourite. And we've got a some great ways you can enjoy granola:
🥄 Add it on top of or mix with yoghurt
🥄 Or better yet, make a yoghurt and fruit parfait with layers of yoghurt, granola and fruit then alternate
🥄 Add it to the top of smoothies or smoothie bowls
🥄 Make an apple crumble topping
🥄 Make granola bars
🥄 Add it to the batter when making muffins
🥄 Add it to the top of a fruit salad
🥄 Add dried fruit and seeds to make a trail mix to snack on
🥄 Add it to your favourite cereal for that extra crunch
🥄 Roll strawberries in chocolate or yoghurt and then roll in the granola for a deliciously cool snack
The thing that makes granola so perfect for quick mornings is that you can make it all ahead of time and keep it fresh in an air tight container. It takes seconds to elevate your breakfast or snack, and your family will love it!
